I'm not low carb, but I AM low grain. Grains have multiple issues. Wheat is like rat poison to me, but a lot of corn isn't really good either. Potatoes don't seem to hurt anything though. You have to do WHAT WORKS. The fact she enjoys eating them isn't really a good sign. Grains are problematic, not least because they are often contaminated. Probably. Like I said, grains are really problematic. There isn't enough research to be dogmatic. I don't feel well on a high-grain diet, but I do eat them some. Mostly I eat vegies, meat, potatoes and good wine. Most of my vegies are kimchi. Lately I've been craving broth soup and indulging that craving, with chopped greens, kimchi, meat, egg drop, or whatever. Then maybe I'll have some popcorn or crackers. Take care of yourself. When my boy was going through a lot, I was always told " Care for the caretaker! " . Stay happy. Read good books. Feed yourself well. There is only so much you can do for the people you care about, but you have to keep your own mind and body sharp. My grandmother was sort of hard to deal with for about 6 years. She ate mainly green beans and ham. That's what she wanted.
