Hi Anita

We were just thinking of getting into Kombucha ourselves. Our local

health food shop recommended this supplier of starter cultures and

Thanks for this Tim. They have a very good question and answer

section too. I would encourage you (and anyone else for that

matter) to start the Kombucha. I brewed it in Canada and loved it.

On it, my son's gut health also seemed to improve, and it tastes so

good that I actually enjoyed giving it to him, rather than feeling

apologetic. I was in the habit of drinking it every day.

I found this site just a few moments ago

http://www.kombu.de/suche2.htm#uk where people in the UK will share

scobies for very little cost (just shipping usually) and you may be

able to pick one up if you live close enough.

Hi Anita

What a great site - we may well take advantage of it. We just tried

some Kombucha drink bought from our local health food shop and were

really surprised how nice it is. It actually seems hard to keep down

to the recommended daily intake! We're definitely going to start

brewing our own.

It really is dead easy to make it, Tim. I didn't have any of the

fancy equipment. Just a large pyrex bowl, good water, a tea towel,

organic tea and sugar and a scoby someone had given me. Left in a

quiet warm place for about 7 days and voila! I had it every morning

with some organic orange juice and felt like I was having a fancy

cocktail of some sort, except most people don't want cocktails full

of bacteria and yeast ;-) Just wierdos like us!

I should have said before to anyone not familiar with kombucha that

it is high in phenols (because of the tea) and amines, and anyone

with problems with those might have to be careful. But it is also

full of great things like glucuronic acid and butyric acid (along

with all the good bacteria and yeast) that are difficult to get from

other sources.

It's very easy to excited about this stuff :-) One of the very

cheapest biomedical interventions you can find.

I also noticed on the page that I gave you that some people have

kefir grains to share. The taste of kefir takes some getting used

to, but I was giving my son about 1 tbsp a day and finding that it

helped his gut. I'll be getting more grains too because I find it

such a nice addition to the kombucha.
