I'll start testing the KT then to see if I like it then. As I said before, thickness doesn't really matter, it's the taste of your KT that's the important thing to consider. In the warm summer weather you definitely do not want your fermentation going on too long, unless you like drinking vinegar! ;-I would have said 7-8 days at a maximum! If you really are after a FAT SCOBY, put some of your KT in a glass (of the diameter you want your scoby to be), cover it, and then let it stand undisturbed for about 2 weeks. The bacteria (scoby-mat builders) should have then fashioned you a lovely thick scoby!).
