Actually, the 'mother' does not float. Most times it remains on or near the

bottom of the newly started brew and is the vehicle for the bacterias and

yeast to get a good foothold in the new sweet tea.

 

Only the 'baby' scoby starts and grows at the top to seal the brew. They appear

at first like little ghost spots (kinda opaque, whitish circles) and rapidly

expand

to cover the surface or seal the container. If you jostle the container, the new

scoby will sink at whatever stage of its growth it is at.

 

The only time I have witnessed a scoby increasing in girth or thickness is

when it is sitting in my scoby hotel with just barely enough finished KT to

keep it moist but not swimming. Then the new baby will grow and attach

itself to the mom like an abalone attaches to a rock in the ocean.

 

I have personally witnessed 'mother' scoby's flip over and change positions

thru out the day. My belief is that it has something to do with barometric

pressure

changes but I'm no scientists. The 'mom' scoby can be quite acrobatic at times.
