grains don't generally do a good job with dairy. " There is one thing I have been successful with time and again and that is using my water kefir grains to culture milk. The first time it tastes like the last batch of water kefir you made. After that it starts tasting like real kefir. After a week or so you cannot tell the difference between kefir made with milk kefir grains or kefir made with water kefir grains. The most interesting thing is that after several months of this, the water grains open up and then look exactly like milk kefir grains, except very small. They even get " slimy " with kefiran and grow like real kefir grains. The whole time they looked like water kefir grains they did not grow. But when they morph into milk kefir grains they grow just as milk kefir grains do, doubling in bulk every 10-14 days.
