n,

I would love some ideas! I'm a single mom, work full-time, and take three

classes. Not planning has been my biggest downfall.

Failing to plan is planning to fail! I appreciate your insight!

Um... Yes... I mean... It's not THAT hard to just sit down and look at my

schedule for the next day and plan what I'm going to eat, but... Then ENTIRE

concept of it all (everything from grocery shopping to actually making the

food) seems daunting to me...

If it seems 'daunting' then break it down into smaller sections. Also, I

can understand that it's hard to plan day-by-day - so do some of it week

(or month) at a time. has a great grocery list at her site

One member prepares the majority of her food on Sunday, and packages the

starchy carb, protein and veg into the Hefty plates that snap closed; I

think any plastic package would work well

- hard boiled eggs (I make at least a dozen at a time)

- cottage cheese and yogurt (you can even divide the cc into smaller

containers when you bring it home from the store, so it's easy to grab)

- chicken cooked in advance and frozen in individual portions

- EFL sloppy joe or beef stew or chilli - make a double or triple batch and

freeze in individual portions

- can of tuna packed in water (protein for 2 meals)

- string cheese and an apple or other fruit (I had to try several to find a

brand of cheese I liked)

- some folks like the egg/oat pudding at room temperature; they make a lot

of it once at refrigerate in individual portions

- the egg/pumpkin pie is very portable; each recipe makes 4 servings

(divide into portions after it's cooled, or bake it into individual

portions rather than pie-size)

- I never cook a single portion of vegetables; cook at least a pound and

refrigerate the leftovers (Let me know if you need ideas of how to cook vegs)

- roast 2 chickens on a Sunday; have some fresh for dinner and freeze the

rest (I either shred it or freeze big chunks, and thaw as needed)

- make a bowl of fresh tomato or fruit salsa, and package in small

containers to grab

- clean the lettuce and salad vegs when you get them home from the store

- make a batch of baked potatoes or yams at a time; they're good cold, room

temperature or reheated - grab & go

- make a batch of parsley tabouli - excellent carb source and stays fresh

in the fridge for a week; after you make it, divy it up into portions

In other words, it is overwhelming if you prepare a day's worth of food at

a time. But it's very manageable if you prepare food in bulk, and then

grab it as needed.

I feel the same as you. What makes it worse is that I've done it before. I don't

know what's wrong with me.
