I reckon you're right about Mam SCOBY though, wouldn't dream of a brew

without her.

Ah great! Measured with KT in mind, will the ugliest, ooglie-full scoby

then win the prize? In my private brewingland it's they that seem to come

up with my best tasting brews!

Going to bottle some KT amidst the ooglified jars ;-)

It seems to be that the mushroom should have a certain appearance.

Len Pozio's advises what to do with a lumpy or a thin mushroom, Ed

Kasper, the Happy Herbalist has lots of pictures of weird mushroom

and states that the mushroom's appearance does show the activity of

what you have fermenting. Go online and there are tons of people

selling " kombucha " and all the pictures of them look the same. So if

it is thick or thin, holes or not, different textures, than you could

judge what you have fermenting. If I make vinegar the MOV will always

look the same, same as when fermenting other vegetables. So it seems

reasonable to me that the kombucha mushroom should look like a

kombucha mushroom, and look like the one that you received.

I agree that beauty is in the eye of the beholder. But that should be

regarding the taste of the tea. The appearance of the mushroom will

depend upon the bacteria and yeasts. That to me is simple biology.

Can anybody here tell me why the mushroom will look really different?

Hi Les,

It's beond me as to why the scoby would look different sometimes. Some

experienced brewer will have to chime in on that one.

I was just curious as to how you would describe a MOV. How does it differ from a

kombucha scoby?

'Tis a funny thing, but if I *intentionally* /grow /one, as detailed

previously, it's Always smooth, clean, clear, textbook, " as seen on TV " .

I think this is why the ones for sale are so handsome. What happens

under normal brewing is a totally different " kettle of fish " (Or SCOBYs)
