OK also a newbie-

I believe I'm doing everything right. I just harvested my 1st batch

after 6 days. The SCOBY I had received floated about mid-way in my

large pyrex-type bowl. The woman from whom I recieved it, had no tea,

so she had packed it in some ACV, and I had used some of that to create

my starter brew. I had a nice new Scoby form on top. I didn't let it

go completely sour, but I would definitely say 'tart'.

Now it had been mentioned in this thread that the tea taste will

diminish. But I must say that the best I can best describe my brew is

'Fizzy Vinagar Tea'. I'm sure something is happening as I'm brewing

because it is getting fizzy after sitting capped in the fridge. I took

my baby scoby and gave it it's own mini-batch this time as well as a new

batch for 'MaMa' both have new Scoby's forming after just 24 hours (not

just a film on top - there's good substance there)

Is 'Fizzy Vinagar Tea' what I'm supposed to be getting?

I would welcome ANY comments !

Jenna,

From the reading I've been doing on here, I thought ACV was a no-no for

kombucha because of the possibility of contamination by vinegar worms.

Maybe the ACV was pasteurized, so wouldn't be a problem?

I have been told not to use ACV but to use unpasteurized white distilled vinegar

Jenna...do you know if the ACV was raw or pateurized?

Raw is not a good thing where brewing Kombucha is concerned as you are

mixing cultures.

Fizzy vinegar tea is not what a good brew should taste like. It should taste

more like a good apple cider.

In a properly finished KT there is no real 'tea' taste and the tartness and

sweetness is dependent on when a brew is harvested which is more or less

dictated by personal taste.

If it was raw ACV I really don't know that there is any way to ensure that

what you have now is not actually vinegar or some hybrid.

If you can determine that the liquid was paseturized, you can continue as

you are, you might otherwise look into getting a new culture.

If the ACV was pasteurized...what proportions are you using of tea, sugar

and water? There really ought not to be that taste of the fresh tea when KT

is finished.

I used plain old grocery store ACV, so I assume it is pasturized.

Honestly, I don't really like apple cider, and do not drink it.

That would explain why that flavor never really came to mind. I asked

Hubby and he thought it was apple cider - like. I would say it's

lighter tasting than cider, as I do actually enjoy the flavor of my brew

- even if I didn't describe it so well.

So I'm glad I didn't really muck the whole thing up. As I said, it

seems very happy doing it's thing up there in the cupboard. I think

I'll let it go a bit longer this time - if my patience olds out!

My current ratios are 2 liters bottled water - 4 or 5 tea bags - 3/4

cups white sugar.

Thanks for the info on vinager. I think i posted wrong info. I think I had the

raw verses pasturized worng. Sorry everyone!!!
