Hello Tess, after looking all over the internet and trying to extract

info from those more knowledgable than me I came across this (WHICH MAY

VERY WELL BE ON FILES ON THIS BLOG)

It is 14 bucks and downloadable. This is micheal roussin's paper.It

does comparisms of different ferments and talks about the metabalism of
