I wrote an article about the way that I do Continuous Fermentation in

one of the Kombucha Manna International Newsletters. You can find it here:

Because the surface of the kombucha is disturbed quite often

(daily or every other day) by adding new tea, formation of

new scobies in the same way an original can be formed

( " skinning " over the top) is unlikely. " Peeling " from the

top of the parent happens, though, after some time.

When the speed of fermentation becomes too fast (your

culture becomes more sour than you like in the time in which

you drink it), you'll want to remove the oldest scoby.

I've never had one die. The main reason people get rid of

the old one and keep the new one is (a) cosmetic, and (B)

who needs so many babies? *grin*

Don't worry . . . we were all newbies once too. The only

annoying newbies are the ones who think they already know

everything!
