Guest guest
I put my scoby in a bowl with lots of KT, a towel with rubber band, just like I do when I'm brewing it. It was on hiatus for about a month. (I didn't notice that I should have also put it in the refrigerator during this time.) My question is that when I brewed my first batch after coming home, the scoby baby was really slimy after 7 days, it looked really good, thick and nice and white. I'm wondering if the slime was a problem. Also, I have read on the list numerous times that if you kill your scoby you could be only getting a MOV. How can you tell if that's what you have? At first, I thought that as long as I'm getting a baby, I'm okay, but I read something the other day that made me rethink that. Thanks, Kathy

Your culture should spring back into happy fermentation the moment you put it in some cool sweet tea! > My question is that when I brewed my first batch after coming home, > the scoby baby was really slimy after 7 days, it looked really good, > thick and nice and white. I'm wondering if the slime was a problem. No, it should not be a problem at all. It is possible to wash it in its own KT ... jiggle it about and gently rub the surface with the KT or a little distilled vinegar. > Also, I have read on the list numerous times that if you kill your > scoby you could be only getting a MOV. You definitely wouldn't. You get 'Mother of Vinegar' only with a MOV culture present in your brew, i.e. having started a prior brew with unpasteurised cider vinegar ... As your scoby is nice and white and thick, I think you would have a proper Kombucha culture and need not worry. Happy brewing!
