Guest guest Posted March 15, 2006 Report Posted March 15, 2006 Hi Maggie - So, please tell us - how did you make the mango salsa? Was that your carb, or was it just a couple of Tbsp of salsa, and you had a separate carb too? n At 01:26 PM 3/15/2006, you wrote: >n, > >Thanks for the great recipe! Guest guest Posted March 15, 2006 Report Posted March 15, 2006 I just threw together a diced up mango, one jalapeno pepper (diced very finely), a clove of garlic (diced very finely), two slices of red onion (also diced up). I also put in some dried cilantro, although fresh would have been even better. Also a little lemon juice and a little salt. I let it sit out on the counter for an hour or so (I think the flavors meld a little better outside of the fridge). My husband didn't think it was hot enough, but his homemade tomato salsa is so hot that I can't even eat it. It was perfect for me. I had a grilled chicken breast with it, maybe 1/4 cup of the salsa, and maybe 1/2 cup brown rice, along with some steamed broccoli for my meal. My husband and I went on our honeymoon last summer to central Mexico, where we had the most amazing salsas. We took a cooking class where we learned to make a great tomatillo salsa that is simply amazing and has very few calories. I'll post it in a separate post. Guest guest Posted March 15, 2006 Report Posted March 15, 2006 Thanks Maggie - I stay away from Jalapeno because spice seems to aggravate my rosacea. I think the salsas are a wonderful accompaniment for this way of eating. If you have any books or websites to recommend, please do so. Thanks n At 01:42 PM 3/15/2006, you wrote: >I just threw together a diced up mango, one jalapeno pepper (diced >very finely), a clove of garlic (diced very finely), two slices of >red onion (also diced up).
