It's very tangy and I like it with the Mesquite Turkey breast from the deli. 24 Proteins/28 carbs, 3 total servings in this recipe: Easy Chicken Salad Serving Size : 3 16 ounces cabbage -- shredded 1/4 cup seasoned rice vinegar 1 Tablespoon soy sauce, low sodium 8 ounces yogurt, fat-free (some use lemon flavor but I like plain) 2 medium apples, peeled -- sliced 1/2 " thick 8 ounces skinless boneless chicken breast, cooked and cut into chunks Mix the rice vinegar with the soy sauce and yogurt. Combine the shredded cabbage, apples and chunks of chicken. Pour dressing over the top and mix well. I like to mix 1 portion with 1/3 of the dressing so it doesn't get soggy. I also like to use Mesquite Turkey breast from the deli counter. I chop up the slices.
