Hi ,

Check the room tempature or maybe you put it in the kitchen. Scoby like to stay

in the dark area and clean air. I used to put my brew in the kitchen and made

my scoby very thin and the tea is sooo sour.

No, . I grew my fattest scoby ever in a very large aperture

Really, thinness or fatness is not important in scobyland.

You say that your Kombucha brew is yummy, that speaks for itself:

You have a healthy brew. It's actually all your brew that's the culture, as

it is teeming with healthy yeasts and bacteria.

The yeasts tend to be on the bottom, the bacteria on top pf the brew -

the scoby being to a large degree bacteria.

It may be that your brew is too much on the yeast side.

To encourage the bacteria side of your brew, make sure you discard the

yeasty slush on the bottom of your brewing container.

Adding green tea to an all black brew can help. I have found that green

tea tends to help scobys to grow fatter.

It's supposed to taste like that, but you can brew a little less long

next time and bottle when it is still a little less acidic.

I'm just off now to do that very thing myself ... about 25 litres to

inspect!

Yes, that is fine. Just fizzy spring water mixed with it can also be yummy.

Make sure that your squash is free from artificial sweeteners and colours,

as they really are not good for you.

I normally have pretty fat SCOBYs but found the month of July they were

underweight consistently. They seem to be beginning to fatten up slightly

more this week. Perhaps this is a seasonal effect.

This aside, I find conditions best for brews in the following order early

spring, late fall, winter, summer.

Though the temperatures are cooler in the winter resulting in slower growth

and fermentation, they often make some of the best tasting brews.

Why does everyone want fat SCOBYs? Does it make a difference? Mine are huge.

Wish they would go on a diet! :)

So what tea do you use , mine are reasonably fat they look

like a piece of ham all pink because of the fruit tea I use :-)

Don't know if it was here I read that 'using mostly green tea made a

sparkly brew with a creamy white scoby' but if I use equal ammounts

of green & black I find it too tart.
