Guest guest Posted October 22, 2004 Report Share Posted October 22, 2004 Ruth - I found your recipe for the cottage cheese treat, but I have a couple more questions: 1 Cup Fat-Free Cottage Cheese 1/3 cup oats 1/2 cup of frozen blueberries 10-15 raw almonds 4-6 packets of Splenda How many servings does this make? Do you blend it? I'm assuming you're using dry oats, so do they soften up pretty soon? I keep seeing how much you are enjoying this meal, so I GOTTA try it myself! Thanks. I suppose you could split it in half if you are worried about it being too many calories or carbs. I calculated it and it is about 300 calories, 9 grams of good fats, 34 carbs, 7 grams of fiber, and 21 grams of protein. So it's a 30/40/30 Protein/Carb/Fat ratio. I think the benefits of having a meal that is a good source of protein, good fat, fiber, and satisfying to eat outweighs the fact that it is higher in carbs...anyway, it's good carbs because it's whole grain and fruit...OH yeah, I use frozen fruit too (adds to the desserty feeling)...I have been progressing fine with it and it is so satisfying, I can't imagine splitting it. I don't blend it because between the almonds, blueberries, cc, and oats, it's a great variety of textures and I love it. I don't find the oats unusually dry, they bind with the cc really well and add to the texture quite wonderfully. To me, the texture of the food is just as important as the taste, and if I blended it, psychologically, it wouldn't be as satisfying to me. It is hearty to sit with the plate of it and eat it with a fork. Play around with it and suit it to your needs. I may be a freak for loving it like I do! Good luck!
