What that really means is that it is the " throw away " parts of beef or pork like ears, gristle, gums, snouts, and you can guess other bodyparts that may be included. This is fairly useless " protein. " I have read something about hydrolyzed protein that sure doesn't make it sound bad at all - in fact makes it sound like a very good protein source. I would think they would use whey or vegetable hydrolyzed protein in a bar instead of by-products of animals. I am incredibly picky when it comes to food and will never eat another one if it actually is animal by-products. I haven't touched a hot dog in 18 years!
