My nod to modern days are ceiling fans in every room, and portable ones for temporary hot spots. My wood stove and traveling little ceramic space heaters work well for our short but intense winters. My old house is perfectly aligned on this caliche hill, with huge live oaks on the east and west and to catch every SE breeze coming uphill from the Pedernales River. So I truly understand your problems with fermentation regarding temperature control! I've been brewing KT over six years (got my special puhr-er blends from our beloved Ari who also lived in Central Texas, and has now passed on) and started on Kefir this year. I've been fermenting sauerkraut and veggies (ala Nourishing Traditions) and making my own red wine vinegar and many extracts as well. These are all ancient traditions, and have been successfull in many areas of the world with a wide range of weather and microbe and temperture fluctuations. So my point in this, is to encourage you to be willing to experiment - experiment - experiment. And know that all research requires a willingness to not be easily turned off by mistakes, failures, or good advice that simply does not work in your locale or for you. This is not rocket science, so you do not have to be perfect, nor can you assume consistant results all the time! We are dealing here with living organisms, that mutate and have beginnings, middles, and ends. Just like us. These living processes and entities are extremely forgiving and very adaptable, and you will learn to love the relationship you create with your food in this way. We are so blessed to have the internet now, where these old ways of co-creating healthy nutrition and healing can be shared all around the globe. So go to the web sites and read, then experiment on your own, and observe everything, and judge for yourself what feels right to your body wisdom. I wish everyone could enjoy my yard full of sunflowers and milkweed, being havested by hundreds of Monarch Butterflies!
