Dear Ones,

I thought Bob always stressed that 75 to 80 degrees F. was the best.

The old 28 cu. ft. refrigerator-freezer that I use for a brewing cabinet

(with the door taped open a crack) is heated by the motor alongside it

(to my long freezer). The temperature ranges from 78 to 80 degrees F.

which I consider perfect for harvesting in six and one-half to seven

days.

Higher temperatures require less time. Lower temperatures take longer.

It's all a matter of personal preference, I guess.

Super. I had my friend taste test with me this evening and we decided that this

batch is defiantly ready! Yeah!

She is taking one scoby or mother, whichever is which, I don't know, I am taking

the other and we are going to divide each and get four bottles going. Soon I

should be doing enough to give in water to all my cats and dogs as well.
