You can use this yeast to manipulate your brew. If the yeast becomes too active in the brewing you would do well not to include the yeast in the starter liquid of your next brew. If, however, the brew starts lacking in bubble and fizz it would be good to include some of the yeast. I had to do this recently after having got rid of the yeast for quite a few brewing cycles when it had become dominant. You can use the yeast (instead of throwing it away) in your bread baking, but supplement with the usual bread baking yeast. It imparts moisture and a specially nice flavour to the bread. Mine is more of a light tan color. Thanks! steve RE: mushroom forming on top of liquid I have pictures online of Carbon Dioxide forming and lifting the baby out of the liquid. Sometimes it looks like the SCOBY is flying! This usually means a good well carbonated drink. More often the gas breaks through and creates holes in the SCOBY.
