I live in Austin and I grew a culture from a bottle of G.T.'s that I bought at

Whole Foods. She's a beaut. I will be transfering her into a huge 2 Gal glass

" Agua Frescas " container next.

Don't know how close you are to me, but I could give you her first 'baby'.

(the 2 gallon mark is right at the top of the pattern, so it's BIG and I imagine

will grow a HUGH Scoby, maybe 20 inches across, but I haven't measured).

Steve, That big glass jar is the same kind that I use to make kombucha.

I have two five gallon Continuous kombucha brew kits:

I make about two and one half gallons in the big glass jar to replace the

kombucha used from the five gallon buckets.

I like the continuous kombucha makers because the brew gives me a broad range of

acids and benefits.

The dispensing spout is the best I have seen. I have had no leaks from either

of the spigots.

I also have the heaters.

Please forward me some pictures, also how did you make the sweet tea strong. I

thought plastic was unsafe for kombucha?

I sent the pics. You can see it was still an infant back on Sept 3rd. Today

it's a nice healthy Scoby sitting in my glass container. The first batch was

too vinegary setting since early september. I will test this one out in 6 days.

I don't know anything about plastic being unsafe. Mine grew up to be a well

adjusted little scoby.

oh and to brew it strong, I put 3 family size, lipton tea-bags in about 4 cups

of water then set it to boil. Once it started boiling, I let it go for about 5

more minutes. I put 1 cup of sugar in a pitcher and poured the hot tea in to

melt it. Then, I added just a little bit of water, maybe 2 or 3 cups and put it

all in the ziplock. Worked great.

I live In San Texas area and also need a baby to start some

Kombucha. Can I start it without a scoby? Like you can start a

sourdough bread starter without the actual starter? Thank you for

your help.

e-mail me and I can tell you how I did it without a scoby OR if you are in the

Austin area, you can have one of my babies. They are still growing so it'll be

about 2-3 weeks (I just got started myself).
