What kind of benefits do you >get from it? >Jeanne Jeanne, I use blackstrap molasses - more to keep sugar to a minimum than for specific nutrient benefits. I do like molasses a lot, so it is not a sacrifice to me! One doesn't really eat all that much of it at a time, so you probably can't count on it as a major source of nutrients. Nonetheless, at least it is a positive, rather than a negative - I know it's got a number of minerals - calcium, potassium, magnesium, copper, manganese, etc. One of my favorite recipes using molasses is a cranberry steamed pudding, (more like a dense cake), which is solely sweetened with molasses, but then served with a separate sweeter sauce to taste. Would you believe that is what I was going to bring to the food swap until I realized I wasn't going to be able to come. I will still do it some other time. Another place I use molasses, is breakfast, a couple of mornings a week in the wintertime. Like Joe said a few months ago, I like warm food in the wintertime. So I " ding up " for myself a sort of beefed up hot cereal. I usually have some sort of grain - millet, quinoa, wild rice etc. that I have soaked & cooked - in my frig. I butter a cereal bowl, break a couple of egg whites into it, scoop in a couple of big spoonfuls of grain, pour on a tablespoon or 2 of blackstrap molasses and whip it up with a fork. Meanwhile, I have brought to a boil 1/4 " - 1/2 " of water in a small, stainless skillet w/lid. This is my little one-serving steamer. I set my bowl in there, turn it down to low & let it steam for 8-10 minutes, until the mixture is puffed up. While that is steaming, I stir some good MOM's cream into the egg yolks, which I then gently " break " into the puffed cereal mixture along with a good pat of butter. Top it with whatever you want - banana and/or other fruit, nuts, ground flax seed, bee pollen, cinnamon, nutmeg, etc. Jan Quote Link to comment Share on other sites More sharing options...
