Stasia, Thanks for the help. I was wondering with diabetes, what

is it exactly that needs to be controlled? Is it the carbs or the

sugars or what? Why do some sites tell me that it's okay to eat

white potatoes, white bread, and white rice?? Why do I need to

limit my fruit to 3 per day?? I'm really confused. Jill

Hi Jill,

I know you asked Stasia this question, but my understanding of what

happens - i.e. how my doctors have explained it to me - is that, in

the process of digesting our food, every carb we eat gets converted

into glucose molecules. The only difference between the different

types of carbs - i.e. " simple " carbs (such as the white carbs Stasia

mentions, and sugar, honey, fruit, or anything else which obviously

tastes sweet) versus " complex " carbs (such as wholemeal breads and

grains, brown rice, lentils, etc) is the SPEED in which this glucose

enters the bloodstream - ready to be taken up by the muscles as

energy.

Therefore, if you eat a lot of simple carbohydrates, the glucose

from these foods enters the blood stream really quickly. In a non-

diabetic, the pancreas kicks in automatically to 'match' this

quickly-rising blood sugar level, with an equally-quickly-rising

dose of insulin! (This is the 'insulin spike' that non-diabetics

experience after eating sugary foods/simple carbs.) Therefore, a

diabetic wants to avoid sugary/simple carbohydrate foods as much as

possible because it is much harder to control a fast increase in

blood sugar levels, than it is to control a slower, more gradual

increase (since we have to control these increases 'artificially'

via either diet, exercise, or insulin injection).

Ideally you should stick to complex carbs and stay away from simple

carbs.
