:::heh::: havin' someone else make it!

One of our favs is buffalo chicken. To make it more BFL, I cook the

chicken part way, cut it into bite-sized chunks. Then spray a little

pam over it and let it brown up a bit before sprinkling on some hot

sauce (to taste). Lastly, to give it a more authentic flavor, I spray

a little 'I can't believe it's not butter' spray and toss to mix.

Yum!

Here's an easy recipe and you can modify it to be lower fat, if you'd like:

1 can of cream of mushroom chicken soup (I use the 98% fat free s)

1 small container of sour cream (I use light or fat free and you can add a bit

more or less depending on your taste)

1 cup of white wine (again, adjust to your preference...I like the taste of wine

in my food)

4 chicken skinless chicken breasts (with the bone it....I tried it with boneless

and they dried out too much)

mix the 3 ingredients togther, pour over chicken, bake for approx. 45 min. at

350 degrees (check towards the end to see if the juices are clear).

Serve with brown rice and broccoli....very good the day of, even better the next

day!!!

Do you have a george foreman grill? I love making my chicken on

that. I got some mccormicks rotisserie chicken seasoning and I put

that on the chicken, stick it on the g.f. grill and let it cook.

usually i'll then cut it up and make some whole wheat penne pasta

and mix the chicken in with some spinach and sliced, cooked

mushrooms. btw, I made the chili in the efl book and its really

good!!
