I freeze vanilla and chocolate almond milk in cubed trays. When we want ice cream they make perfect bases. Last night I used 20 vanilla cubes, just enough almond milk to cover the blades and 1 T unsweetened cocoa powder. It was so good. I served it with about a tsp of Heath bits on top. It tasted very rich, like a hint of dark chocolate. I've done the same but omitted the cocoa and added peaches and about 2 T caramel, again so good. With the chocolate cubes, I like to add 1 T of instant coffee and caramel. With just those two bases, your possibilities are endless. I used a mix of regular sugar (gasp!) and vanilla stevia for sweetener (still working on getting the right sweetener and ratio there, since my husband doesn't like the taste of stevia at all, and I won't use artificial sweeteners. And I completely forgot to put in ice cubes. I put everything except the strawberries in the VM and blended on variable speed 1 until the cocoa and sweetener were well mixed and dissolved (I taste-tested here, to make sure the sweetness level was ok), then put in the strawberries and blended on high with the tamper. It only makes about two cups, so I didn't get the proper 'pillows' you'd get from a larger amount.. but I've got no complaints. The result was a rich, creamy, intensely flavored chocolate-strawberry ice cream that's made it to my 'keeper' file. I scraped out as much as I could into a bowl with the spatula, then scooped it with an ice cream scoop into two bowls to give it more of an 'ice cream' look.. Made two approx 1-cup servings for under 125 calories. I'm sure you've all got your own favorite healthy cocoa powders.. and in time I'll graduate to them too. Next time I'll try subbing raspberries... My handful of successes have included the use of almond milk ice cubes.. both original and vanilla.. but that requires some forethought.. actually HAVING those ice cubes at the ready. This recipe didn't require any of that.. and more importantly, it didn't make a HUGE amount of ice cream for just two people. Working with that ratio of one cup non-frozen to 3 cups frozen.. .. it makes quite a lot (read: Unnecessary Temptation!!) for just two people. , all three of your recipes sound REALLY good.. I have to add calories for weight gain so another good one is just almond cubes with just enough milk to cover the blades and a few Oreos. Yummy!!! Let me know how things turn out. Also, I make a lot just for myself for extra calories at the end of the day. I use about 10 cubes and just cut back on my other add ins by just a bit. I tried the whole making base from scratch thing, but it all tastes great with the flavored almond milks.
