bruschetta in the vitamix?

I just was introduced to bruschetta and wondered if I could make it in the

vitamix. I went to the vitamix website to do a search but came up with

nothing.

Does anyone have a good recipe and able to tell me how to make it so it is

chunky and not liquid?

Since nobody has replied to my question about bruschetta...am I correct in

assuming that it can't be made using the vitamix?

Hi Kathleen,I found this recipe on youtube using the vitamix:http://www.youtube.com/watch?v=BtoroO_Z1N4I would think that you could use any of the salsa recipes in the vitamix cookbooks to use on the toasted bread. Or atleast use those as a base to make your own recipe.

I think it is all about the low speed and not blending it too long so as to keep it chunky without turning it to liquid.Have fun experimenting- bruschetta is so yummy!

Bruschetta is toasted bread. It's served with various toppings but many times

just rubbed with garlic and good olive oil, what kind of topping are you looking

for. I have a very good one that I make, it's topped with goat cheese with

grapes. When you mention chunky it sounds like you might be going for a tomato

type.

Terry, the one I had was an appetizer in a restaurant...It was pieces of

tomato, garlic, feta cheese and oil on toasted bread...I'm sure there were

other ingredients but not sure what.

I wouldn't mind your recipe with the goat cheese...it sounds good.

Sounds good. I love the saltiness of feta. I'll kick up a recipe for you. I

think you can make just about anything chunky in the Vitamix using a low

variable setting. But your description sound like the feta us probably crumbled

a bit by hand and added to the tomato/garlic mix.

I'll send the goat cheese recipe just as soon as I get on my computer where I

have my cookbooks.
