I had read this wks ago, but obviously had forgotten it.

When I was trying today to make the nut butter, I did not use the three cups, because I would not use that much nut butter in a yrs time (unless it can be frozen, and will thaw out OK?) (Since I was using the smallest container, I thought that as long as the seeds well-covered the blades, then that was OK, but obviously this is not correct)I did use the tamper immediately, as the powder was sticking to the sides, but the tamper wasn't loosening the powder at all - what should I have done? (Boy, one really gets a work out making this!) Les PS: THank you for typing out all the details in that link!

Hello Les,I don't think it is possible to make nut butters with less than 3 cups of nuts (my guess is that 2 cups would be the minimum that a person "might" be able to make it, but I'm not sure - have never tried it). Under 3 cups and the air pocket is constant and un-poppable so there never is a chance for the blades to process the nuts. They are always flung to the sides of the container and never have a chance to flow through the blades.I can only suggest getting a couple of friends to go in with you on the cost of the pumpkin seeds in return for 1/3 of the final product??? Or, make 3 cups and freeze 2 of them?

Will it freeze, and then thaw, OK? (or maybe you have never needed to do that in your household? It's only me in my household)

I am amazed at the technical knowledge you have regarding this (like, under three cups the air pocket is un-poppable and constant)- how did you ever figure all of this out???How long have you been involved with Vitamix, doing this work? (I was thinking today abt how much energy you need to do this job - on top of being a mother and tending to a family) Les

LOL - it is a challenge that is for sure! I have trained 3 people - 2 quit on the first day (most people see us up in the booth and think that demonstrating is all there is to it - the shopping, cleaning of veggies, set up and tear down is shockingly challenging! I am a part time demonstrator though, so I only do one 5-day road show (which takes 7 days when you consider packing, unpacking, shopping, set up and tear down of the booth + the expense report). So, I work one week and have 3 weeks off. As far as understanding how the machine works - I do have a bit of an "engineering thinking mind" OR it could just be that I've made LOADS of batches of nut butter and have, over time, seen how the machine operates and figured it out?I've been with Vitamix for four years and two months - longer than I've held any other (paying) job! You say you work one wk on, then 3 wks off - but how much of that three wks off time is your physical recovery, and trying to play 'catch up' on things that occurred in your family life that were put on hold while you were out on the road (so those three wks are still crammed, due to being away from home for that one wk)Your work history has served you in good stead for this job, in that you had a lot of interaction with the public in your prior jobs

I used to be a career counselor, and the a personnalist with the Army, so I am interestd in people's choice of jobs naturally

I believe that people should have jobs that are rewarding; a person spends a lot of their life (typically, unless cut short by disability or whatever (like mine was), and so their job, ideally, should be one that they enjoy doing (and every job has features that are not enjoyable,for sure)If you have been with Vitamix for only four yrs, I am further amazed that you know so much abt it (and I bet you make a concentrated effort to keep training yourself, so you can be prepared when showing the public what a dream machine the VM is?) Les PS: Do you know if the nut butter, if frozen, would thaw out ok, no loss in flavor and texture? If so, then it makes a lot of sense to make a big batch at once.

Hmmm, I've never frozen nut butters - anyone on the list tried this???My "guess" is that because there is so much oil it would be very similar to an unfrozen batch.Eager to hear from anyone who may have tried this.OK - did a Google search, and in addition to implying that YES you can freeze nut butters - there are some amazing recipe ideas, and good information about how to roast your own nuts. http://makeitnaked.wordpress.com/2011/01/19/nut-butters/And yes, there is a big decompression period after a show where I am not very "efficient' at home. I had to do some 10-day shows and they just about did me in (the job is a 14 hour day for me) but I LOVE IT. I still can't believe that I am so lucky to have found a job where my natural desire to teach, share health information, and help others improve their health, actually allows me to make a living!

So, I work one week and have 3 weeks off.

As far as understanding how the machine works - I do have a bit of an "engineering thinking mind" OR it could just be that I've made LOADS of batches of nut butter and have, over time, seen how the machine operates and figured it out?

I am curious Lea Ann, because I have not tried making it yet, how

many cups of nut butter does 3 cups of nuts yield? I am thinking

there is air space between the nuts before hand so it must be

smaller than 3 cups when it comes out.

THank you for this priceless link (the photos had me drooling!)Don't nuts have more oil (and moisture in general) than seeds? My roasted pumpkin seeds are almost flat once roasted, and not much moisture

When I was looking at the pics on this link of processing the cashews in her food processor, even her beginning powder looked like it had more moisture than my powdered nuts (which looked like flour)Or if I VM a larger quantity of seeds, then somehow more moisture appears?

I think her idea of putting dollops of nut butter on wax paper and freezing is genius!

Lea Ann, how could you possibly have done this job with FMS (fibro)??? Unless you did not have the push/crash symptoms? How did you ever get better from FMS with having to do this job?

I think God has put this job in your pathway as your gift to share with people (I forget which Book that is in, that lists the types of gifts that people might have). Can you even imagine how many lives you have changed with showing the VM's wonders to people , and then they buy it, get improveed health, etc? Les

The photos had me drooling too! Hmmm, what I've gathered from my attempts to make coconut butter out of flakes with different levels of oil content, is that adding oil works (at least for coconut butter, and I've done it for almond butter as well). When the nuts or coconut is just too dry, adding oil makes it turn out right.The problem is going to be choosing what oil to add. For pumpkin seed butter, I have to mention that I DID see pumpkin seed oil at my last Whole Foods Market show! Regarding cashews, they do have more oil that almonds (or at least they blend easier) so perhaps your pumpkin seeds are more like almonds (and need supplemental oil). I don't think a larger volume would have that much of a positive impact on the creation of oil, however, it does have to flow through the blades to get the powdered stuff to turn into nut butter, so perhaps the larger amount WILL have a positive effect on the amount of oil that is released from the seeds into the seed butter.As for the Chronic Fatigue (luckily I never had the pain that goes along with fibro). I give God all of the Glory. I cried out to him WHY??? When after years I was just not getting better, and I could see no positive side of me having chronic fatigue. I didn't try to bargain with Him, but I did pray that He would make good use of the condition - that somehow all of the sickness and lost years would not be in vain. I believe that He answered that prayer in spades! I perceived it as a God incidence that I read two books at the same time - one to get me drinking Green Smoothies, and one to get me to try a gluten-free, sugar free diet. When I made those changes I felt better almost immediately! I had a second "crash" about 2.5 years ago and learned a WHOLE lot more than just Green Smoothies + No Sugar + No Wheat, and again, I feel blessed that I can take some of what I've learned to pull out of this second slump to help others when I can...As a Christian I have a LOT of areas where God has a LOT of work to do to smooth out a LOT of my rough edges, but it gives me encouragement, that He sees fit to use me to be a positive influence in SOME areas of my life :-) Helping others through teaching, and being So Lucky that I can also earn an income doing something I love is such a blessing to me - probably as much as I have been a blessing to others! :-)
