Guest guest
I make pumpkin pie ice cream that is totally vegan, but tastes decadent and rich! I puree roasted pumpkin and add raw agave nectar and pumpkin pie spice, then freeze it in to cubes in an ice cube tray. When I am ready for ice cream, I just throw them in the VM with a splash of rice milk (any type of liquid is fine-coconut milk, almond milk, orange juice, etc) and make my ice cream. It is wonderful! You can use honey, maple syrup, or any other sweetener.Sent from my iPadOn Oct 26, 2011, at 9:52 PM, "lioness21031" <lioness21031@...> wrote: Hi group, I joined several weeks ago right after I bought my first Vitamix, and have learned so much. My green smoothies taste terrific now, thanks to this group. I'm having guests for dinner on Friday and want to serve something "mainstream" for dessert (I am vegan, and sorta blending the McDougall and Eat to Live programs). Frozen pumpkin dessert sounds good to me. My current thinking is to blend pureed pumpkin with some non-dairy milk (almond, in my case), a ton of ice, pumpkin pie spice and a dash of maple syrup. Think it will work? Anyone have a good recipe? Thanks in advance,

Guest guest
You are most welcome! I grow many varieties of pumpkins in my garden, and roast them whole in my solar oven. Having a lot of food allergies, pumpkin is one of my staple foods-I have tons of other recipes for it, if you want any. Guest guest
This sounds great! Do you want it to be more like a smoothie or an ice cream? If more ice cream like, be sure not to put too much ice in or you could over heat the motor. REALLY frozen concoctions shouldn't go higher than the 4 cup line. /message/17417You could freeze the almond milk into ice cubes for a richer final product!
