About to put my VM to work!

So the kids have friends over for the weekend and we are all preparing for the

GP walk for awareness Sunday. My daughter and hubby went shopping to finish up

some staple things we've been slowing acquiring. BIGGEST, finally mason jars

yay. So I am making some yumnys to take to the walk to show people how great I

still get to eat with my VM. I am also about to cook for the kids sleepovers.

Here's what I have planned:

For the kids tonight Tortilla Soup and frozen strawberry yogurt.

Then I am going to make peanut butter, almond butter, coconut butter (? Though,

hubby bought sweetened by accident, so should I hold off on that one?), I have

some spinach I don't want to go bad so I am going to go ahead and make a

smoothie and ice cube freeze it and homemade applesauce. I have a few baked

potatoes left from Monday so I am planning to make some potato soup for

freezing. Anyone think Im going to hurt my beloved VM doing all this? Any

special order? Is it ok to make a big batch of applesauce and put up in mason

jars? AND do I have to refrigerate that or will they keep at room temp?

Wow - has your Vitamix paid for itself already or what?! It will have no problems making all of that - but be sure not to try the sweetened coconut flakes - That WOULD gum up the blades - it just doesn't turn into coconut butter from what I've read online. As long as there is lemon in the raw applesauce to slow down oxidation, I don't see why you couldn't store it in mason jars (I'd store it in the fridge). I wouldn't go longer than 24-48 hours though.

Ha its paid for itself over and over again. I am addicted lol. Thanks for the

heads up. So far from day 1 everything's turned out perfect so I would've been

heart broken had that coconut butter done that lol. One question, so the

applesauce will only hold with lemon about 2 days? :( man I love applesauce. Im

glad apples hold up if so then I can just split it up and maybe even freeze a

few for our favorite green smoothie.

The applesauce would be like a juice. The live enzymes would be gone after 30 minutes, the minerals and fiber will always be there, and the vitamins slowly degrade over time. You definitely could freeze some and it should last a bit longer (don't know what it would do to the texture though).
