Guest guest Posted February 4, 2004 Report Share Posted February 4, 2004 Phil and all, Maybe you heard it too but BARBARA STIT, owner of Natural Ovens of Manitowak and creator of the WI Miracle, was on RON DUFFY'S Fresh Air radio show THE INNER JOURNEY yesterday! It was the 3rd part of the interview and I have heard all three parts. She is great. Her husband is a sharp one too and owned the bakery before she came on board. He has written several books on health issues and the politics of the food giants. She subsidized the health conversion of the Appleton HS lunch program to the tune of $20K a year for 5 years. That's all it cost and the transformation was stunning. They have a video for sale that illustrates the results. My wife Rebekah is doing a similar project with a charter school here in the TC area and is getting good responses. She is also incorporating the ideas that ALICE WATERS is doing with school lunch programs in the Bay Area. One can purchase a CD of the full interview by calling 651-486-7914 or ron@... They are a little more grain- based than I, don't do dairy at all and eat only the yolks in eggs. I love what they are doing in the Appleton area. I am on a new Nutrition committee at a public elementary school. We are trying to improve the school lunch but also look at all of the opportunities to eat " food " at school- snacks, celebrations such as birthday treats. parties & holidays, PTA events, extended day care (RKK) etc. Any ideas, tips or encouragement would be appreciated. (Can we get Rebekah to come to our school???) However, I am sure Rebekah would be glad to come to your aid, speak to your Nutrition group or whatever. That would make you less the 'bad cop " . I'm glad to hear your school has such a committee. That is a huge step. You could also sponsor a NUTRITION LECTURE in the school for anyone to attend, say, once a month. Much of what she tries to bring to the program is not so much " taking away " what they like to eat, but trying to " provide even more fun options " . For kids, getting to GROW A GARDEN, GO TO A DAIRY, MAKE YOGURT, GROW SPROUTS, COOK A MEAL, or otherwise become involved with food, that is perceived as " good " . I saw an excerpt from a grade school in FRANCE where all the little kids got chef's hats and aprons and were learning SERIOUS aspects of fine cuisine. It brought tears of joy to the eyes to see how " civilized " this country was! You could also send a FORM LETTER to parents about the categories of foods that are acceptable for school parties. Let them know that many children have obesity issues, behavior issues, medications, diabetes risks and so on, this could help with the flood of cheap grocery deli crap that comes in the door for party snacks. Guest guest Posted February 8, 2004 Report Share Posted February 8, 2004 Will, I talk to the PTA on Tues. to ask them to come under the " umbrella " of good nutrition and for instance to NEVER serve pop/soda (whatever you call it) at their events. The person in charge of Bingo Night which was last week had a heads up about this request and willingly opted not to serve it -instead she served fruit punch or apple juice and these horrible white cookies with thick pink icing and sprinkles. Oh well, baby steps right? My other request is for the PTA to fund a speaker to benefit the entire school. It is nice when we can have one speaker for the adults and some others to work with their kids on the same subject. I like to get the kids involved and besides, what would some parents do with them? I like the idea of a once a month speaker but am afraid that attendance would sufffer with the overbooked families of the suburbs. I would love for Rebekah to speak to our committee. We are looking for exactly what you describe- ideas for fun options with food. Hopefully, we would consider her for the other presentation as well. Right now, another member of the Nutrition Committee who is working on her doctorate in nutrition at the U of M has offered that she knows someone who is a good speaker. I am a little leary that she might be too conventional (at least for me)- you know, like she might recommend sweetened yogurt and wheat bread instead of white as the ultimate healthy foods. So do you know how I might get in touch with this Rebekah? And I believe I asked this question before on this list and didn't get an answer- but I'll risk it again...Is she the " Dairy Fairy " ?
