Guest guest
This is for a family meal, sorry I don't have measurements, I made it up. Would love to hear from anyone who tries it and would love your opinion. I start with a small roast, cut it up into inch by inch pieces. Brown it, I don't have to use any oil, because I have thick stainless steel pan....but if you have to use oil, use little. Add salt to meat for flavor. Once meat is brown, I add a white wine....cheap rhine wine is good....I usually add till it covers all the meat but no higher....low boil for an hour, make sure you have half the wine left. While meat is boiling, saute lots of mushrooms (2 big sliced baskets from grocery store or a whole bag full of unsliced) and at least an onion and a half if not more in real butter. I like rice, instead of pasta so it takes about 20 mins, so I start that also, if pasta you can start it 10 mins before serving..... After meat has boiled for an hour and is melting in your mouth like butter, then add sauted mushrooms and onions. Make sure wine taste has boiled out mix meat, onoin and mushrooms, then add 1 or 2 cans cream of mushroom, depending on how big the roast was and how much wine you added....you want little juice so the crm of mush thickens it.... Then add lotss of sour cream, probably at least a cup.....taste and thicken if you have to.....I will add a little corn starch w/ a little water then mix in if I have to thicken more... Put over rice or pasta and you will have the best stroganoff ever... This is good served with romaine lettuce, real parmasean cheese, croutons and homemade dressing. Dressing...sorry I have a cousin in CA that sends me fresh ripe lemons from her tree, but a ripe lemon or lime from the store will do.... squeeze whole lemon Add tablespoon of EVOO (extra virgin olive oil), 2 garlic cloves minced finely...add real mayonaise (couple of tablespoons) till thickened but not too thickened (taste it to judge)....add pepper to it or just to the salad.....to taste....enjoy.
