I'd imagine that the trick is not to grind it too fine; you want a cereal grind rather than rice flour. cream of rice? hi all.. looking for help on this if anyone knows. i enjoy a hot cereal from the makers of cream of wheat, known as cream of rice. anyone know if i can make this myself by grinding rice in the vitamix dry container? i have only eaten the quick cook variety ...not sure if i can shorten the cooking time too? thanks ! As I mentioned in another post, your better option is to use a good organic rice-not a "quick cook or enriched" rice. To get a course grind, do small amounts (maybe 1 cup) at a time. It takes a little playing with it to find the right texture. I have a grain flaker that I use to make a nice flaked rice, but the VM does a wonderful job of grinding rice either course, or fine for flour. Red quinoa, buckwheat groats, and oat groats also make lovely hot cereal grains-and the VM will tackle them all beautifully. I like cooking grains in my crockpot, or steaming them-again, you have to play around with them a bit for a good method. I often combine the grains for an absolutely wonderful hot cereal, and sometimes I dehydrate the rolled grains for a gluten free cold cereal too.From: obrocp <ahcor4@...>Subject: Re: cream of rice? Guest guest Posted May 24, 2011 Report Share Posted May 24, 2011 I buzz small amounts on high, in the dry container, by buzzing it straight to high, then OFF, then HIGH, then off-usually two quick "pulses" will do a fine grind. The longer you leave it on, the finer the grind. Doing smaller amounts at a time really helps control the texture.
