Guest guest Posted May 21, 2011 Report Share Posted May 21, 2011 I used a can of vegetable broth and one slice of nitrite/nitrate-free bacon. Added the Greens, put a lid on the pot, cooked on high until the broth got good and hot then turned the stove down to low and cooked 'em for about 3 hours. Collards take quite a while to get soft. At the end I took the lid off to allow the steam to escape and reduced the veggie broth down to a nice, thick liquid. I got the inspiration for cooking it this way from the long discussion about cooking greens we had a while back. Which I can do with no husband or kids saying "What this again" That is one great thing about living alone with a couple small dogs as family. My family all live 55 to 60 miles away and one is in California. I cannot wait to try this.
