Guest guest Posted March 11, 2011 Report Share Posted March 11, 2011 Hey everyone, I LOVE Durkee's Famous Sauce http://www.durkee.com/homeuse/spices-famous-sauce.php (has anyone else tried it?) but soy bean oil is the main ingredient and I am avoiding soy (the most GMO ingredient out there) and there is a lot of sugar and other bad stuff in it. So... yesterday I made a mayonnaise recipe that failed due to rancid olive oil. I was going through my fridge to clean stuff out and ran across a bottle of body balance oil http://www.bodybio.com/storeproduct353.aspx that I also think needed to be used up due to being in my fridge for too long. I tasted it and could not TASTE rancidity so decided to use it in an attempt to make a new batch of mayonnaise. However, as I was sorting through jars I saw my almost empty bottle of Durkee's (ok, I read the label and saw that there was soy oil in it, but couldn't make myself dump it down the drain so I'd been eating some here and there - guilty look) and I decided to attempt to make Durkee's instead. From the mayonnaise recipe I got the general idea of what goes in a mayo - this is the mayo recipe I followed: http://80breakfasts.blogspot.com/2007/03/homemade-mayonnaise-with-olive-oil.html For the Durkee's I looked at the ingredients (and taste tested) to see what is special about Durkee's - it is the sweet and the vinegar taste that I am loving so I put an egg in the VM, lots more dijon mustard than the mayo recipe calls for (I squeezed it right out of the bottle - must have been close to 3 tbs. then I shook a decent amount of sea salt in there and used my peppercorn grinder to put in some pepper to taste then glugged some raw apple cider vinegar (to replace the lemon juice in the mayo) and it was probably 2-3 tbs. Then I started the VM on variable 3-4 and drizzled the one cup of Body Balance oil in. It wasn't sweet like Durkee's so I added 10 drops of Stevia - it needed more so I added 5 drops more and voila - it was as close to real Durkee's as I'm ever going to get and WITHOUT bad oils or preservatives!
