My favorite is " cream " of cauliflower, but has no cream. I just lightly steam

cauliflower in my steamer, put it in the VM with a splash of rice or almond milk

(can use real milk or cream, if desired) and a pinch of sea salt. I use enough

cauliflower to give it the body and texture I want, and it turns out very

velvety and smooth. You can add grated cheese, herbs or other seasonings. This

is a thick, rich, lovely soup that I eat daily. This also works with steamed

cabbage, beets, or other veggies.

Have you tried my Tortilla Soup? As long as you use the Blend It Up Spice, just about any veggies you toss in there end up tasting the same in the end (as long as there are plenty of tomatoes) Check out my recipe (on my website) it is MUCH better than the one in the cookbook (at least that is what people who have tried both say…)I make a lot of soups exclusively in the Vitamix, but I steam the veggies first. Carrot and Asparagus are two of my favorites and I often just use the veggies, some of the water I steamed them in, and sea salt! If I have them on hand I toss in a few un-roasted cashews for creaminess…

Tortilla Soup, veggies roasted in a foil pack prior to blending. Even if you do use raw, you're really better off cooking the onions somehow (the garlic's not as critical but it doesn't hurt either). It makes a big difference.

Hi all

I'm after ideas for soups that are made all, or mostly, in the vitamix.

So I'm not after a normal soup recipe that you cook in a pot on the

stove and then whizz in the vitamix to make it smooth. I'd like

favourite recipes of soups that are preferably from raw vegetables and

whatever else they need, that are then whizzed in the vitamix until hot.

I've tried a tomato one, and it wasn't as good as I'd hoped.

Recipe could perhaps involve roasting some veg first or something like

that if necessary.

So, what are your favourite soup recipes?

There is a big flavor difference. That is why I said that if you have the Blend It Up Spice, your soup will end up tasting a lot like my Tortilla Soup regardless of what you put in it (within reason). The spice helps to cover the slightly bitter taste of the raw veggies. Even heated up to 190° they don't actually "cook". Steamed or roasted veggies have a much sweeter, less bitter taste to them.It is all a mater of taste an preference. If you are wanting raw (or mostly raw) then you have to put up with the taste. For me, that isn't much of an issue, for some - it is very important not to taste the "raw" taste vs. the "cooked".

You CAN cook it in the VM, but I find it to be too bitter if not steamed first. I like the texture steaming gives it. I steam most of my veggies in a simple countertop steamer, then store any extra that I plan to use within the next day or so in a mason jar in my fridge. When done that way, it is easy to just pour the jar of pre steamed veggies in the VM and let it heat it up from there. I steam my veggies the night before, and put them in the VM cold-I go take a shower while it cooks, and come back to a lovely steaming hot bowl of soup-doesn't get much simpler than that!From: FOOD FUN <foodfun@...>Subject: Fw:

To mix the Soup Recipes and Costco threads:

My easy soup recipe is a take on the Broccolli soup recipe in the Vitamix book. I put a cup of milk and a cup of Costco's frozen Normandy-Style Vegetable Blend (broccolli, cauliflower, carrots) in a bowl and heat it up in the microwave for 3 minutes. Throw it into the Vitamix with a bit of cheddar cheese, a quarter vegetable boullon, and a few shakes of the Soutwest Spice Blend. And process for 4 minutes.

Quick, easy, and I don't have to throw away all of those fresh vegetables that I never get to before they go bad in the refrigerator.

Now this is how I cook! Take a basic recipe and tweak it! - you will appreciate this story. One day at a Costco demonstration is was REALLY slow and I couldn't draw a crowd to save my life. Someone walked by and we were talking about what the Vitamix could do and they had a bag of that frozen vegetable mix in their cart and I told them I could make hot soup out of those frozen veggies. They didn't believe me so I asked them if they were willing to give me some of the veggies to prove it. They did and I put some in the container with 3 cubes of cheese, some Blend It Up Spice, some salt, some hot water and it went from almost like ice cream (mind you it started out frozen) to hot steaming soup in about 8 minutes. Told some jokes to pass the time and by the time the soup was finished I had a small crowd and the people were all telling the story of how this soup started from frozen veggies!Your recipe sounds especially tasty. For people who don't eat dairy, water and raw cashews would add the same creaminess.

We love butternut squash soup. I just ate the last of it last night with some steamed & fried parsnips, topped with sour cream and sprouts. YUMMY!I roast the squash (you can peel it first or just take the seeds out and scoop out the flesh after it's roasted.) If I'm adding other veggies (onions/leeks and carrots or parsnips) to the soup, I roast them along with the squash. I love it when the veggies get just a bit charred around the edges, but you can take them out when just tender. My "recipe" varies, but usually includes broth (either chicken or veggie), sea salt, pepper, sometimes an herbal bouillon cube (like Rapunzel's). I sometimes use garlic salt (from a grinder) in place of the sea salt, or saute fresh garlic in a little oil before adding it (it tends to get bitter if roasted with the other veggies). Put everything in the VM and blend away! As Lea Ann says, be sure to have the VM on high and blend at least 2 minutes for the creamiest soup. Sprinkle chopped parsley or shredded or grated Parmesan on top for a treat. You can add some cream for a velvety texture.Sorry this is not more specific. I've made several different actual recipes of squash soup and this is

kind of a synthesis of them. You can also add an apple or two (roasted along with the squash). You can also use several different kinds of winter squash.This warms you all the way down! If you like curry, that adds to the warmth. Orange peel gives a slightly different finish. Here's a "real" recipe from Taste of Home's Big Book of Soup. Sounds perfect for a hot summer's day. Hi, I made a delicious soup from New Year's Eve leftovers - probably not the healthiest soup ever but it was very good and could have a thousand different variations!!  I can't remember everything I put in it - potato skins, veggies from the veggie platter plus a bit of the dip, some smokey cheese, turkey sausage, some broth and I think I probably sauted some onion and garlic.

That would have been the perfect ending to the story, but alas, they didn't from me - but statistics show that it takes 4 exposures to a Vitamix before someone buys, so that might have been their #1 :-)

I remember your original description of this soup. Sounds delicious. And it is a perfect example of why the Vitamix ROCKS! :-) And a perfect example of "Must Go Soup" (whatever is in your refrigerator that "Must Go" :-)

I had seen the demo a couple of times in my NJ Sam's Club but when I finally made the decision, it was too late. But then I joined the other Vitamix group where Lea Ann seemed to be a "go to" person for questions, so I contacted her and bought my Vitamix from her! Maybe it all evens out in the end!

My favorite is "cream" of cauliflower, but has no

cream. I just lightly

steam cauliflower in my steamer, put it in the VM

with a splash of rice or

almond milk (can use real milk or cream, if

desired) and a pinch of sea

salt. I use enough cauliflower to give it the body

and texture I want, and

it turns out very velvety and smooth. You can add

grated cheese, herbs or

other seasonings. This is a thick, rich, lovely

soup that I eat daily.

This also works with steamed cabbage, beets, or

other veggies.

I have steamed EVERYTHING that can be cooked, lol. I am vegetarian, so I don't eat fish, but I do cook it for my mom when she is here, and the steamer is PERFECT for fish! When I did eat fish, steaming was my preferred method.

I really lean towards vegetarian, but with a husband who is a very

fragile insulin dependent type 1 diabetic, he has to have some

protein so as to make up enough volume for the carbs he can't

consume without excessive insulin. So, I end up eating more meat and

poultry than I want to, when I really could happily give it up. Then

there is the fact that he does not like fish and hates the smell so

maybe a steamer would let me fix it for me, with less smell for him.

Meanwhile I am hoping to get back to smoothies for breakfast, soups

or salads for my lunch and lots of veggies and a little meat or fish

for supper and just give him more of what he wants.

A great thing about most steamers is they come with stackable steaming baskets, so you can easily add more meat or poultry to one basket for hubby, and less or none to another basket of the otherwise same ingredients for you. I find it the simplest method of cooking, and is certainly handy for lightly steaming things before pureeing them in the VM!
