Although good in theory, it won't work in the sense that you think it will, by using frozen corn which already contains the water needed. Grits and polenta are actually not the same thing-they are made from different types of corn. Grits are also often chemically treated with lye, often referred to as LIME, which people believe is the harmless green fruit-NOT the case. The protein and starch structure change in dried form, and further change when chemically treated. However, you can make a wonderful corn pudding in your Vitmix that would be a delightful dish that could be used the same way as grits or polenta. I am allergic to corn, so I make a rice based "polenta" cake by grinding brown rice into meal and making my cake from that-I can also slice it and dehydrate it into delicious crispy crackers. I can make crackers from

No. For one thing, grits and cornmeal are two different animals. Grits (which are holy to me) are the leavings of the corn-milling process--they're not something you can make (i.e., grind) at home unless home happens to be a mill. And they need to be cooked slowly, either on the stove (stirred constantly) or in a slow-cooker (I have a tiny one just for cooking grits).This just isn't something that can be done in a Vitamix.

Grits can be made with pretty much any kind of corn that's being milled into meal. It's a byproduct of the process and is determined by the size of the particles and the screen through which the particles pass, not the type of corn. The grits you're referring to are hominy grits--they're not the only kid on the block. :) They are, however, also designated "grits" based on the same sifting criteria.

Grits cook very nicely in a pressure cooker too.

If you follow the directions that won't happen, millions of people use them

every day it's nutrition and time friendly. Just my opinion.

I have to say I got a digital pressure cooker a while back and so probably

prejudiced. I love the thing, beans, rice, grains, etc

Love it! I got the 7 quart WP from them and it was only $39 then. I thought

they'd sent me the wrong one so emailed, they told me the same thing, keep the

old one, we will send you a new one. Customer service like that is so rare now.

Fortunately I discovered they'd sent me the correct one (grin) so no resending

necessary but so nice to have the option.

There is a slow cooker on QVC or HSN I forget that has a glass container. It's

very cool looking.

I just mix brown rice flour (buzz up brown rice in the VM-dry container) with enough water to cover the rice by maybe 1/4 inch. Stir VERY well with a fork, mixing in sea salt or herbs as desired (you can also mix it with broth or stock instead of water, but I like my crackers very plain. I mix it directly in a ceramic casserole dish, which is long and narrow, sort of like a whimpy bread pan, but you can use whatever shaped dish you like (the shape DOES matter to the final cracker) I then put the casserole dish down in my steamer or bake it in my solar oven. This mixture needs long, slow cooking. If I steam it, I steam it for about 75 minutes. If I put it in the solar oven, I just let it go for a couple of hours. (I have never done these in a regular oven, but if I WERE to, I would probably bake them at very low

heat (maybe 275) for an hour or so, then leave it in the oven for another hour with the oven turned off. Once cooked, set the whole dish on a cookie rack to cool completely. Then, slip a butter knife under one edge of it to loosen it from the casserole, and invert it onto a cutting board to unmold it (will be very dense, very solid-like polenta) Then, slice thinly into "crackers" and dehydrate those overnight, or for at least 10 hours. I sprinkle them with sea salt before I dehydrate. I will be making a batch in a few minutes, and will take a video, if that will help.

I have a couple of those cheeky mini slow cookers too. I quit using slow

cookers when I discovered most of them contain lead, but I have a mason jar

that fits perfectly in my mini and I cook grains in it overnight. Easy to

throw them in to have hot and ready in the mornings! Whole oat groats,

buckwheat, brown rice, quinoa, or any combination of those work in it as

well. I also use the pressure cooker, but more for root veggies than grains.

I recently had my eye on a nifty little 2.5 quart pressure cooker (yes, a

pressure cooker that small), but I didn't like the non stick lined pan with

it. Lovely size though! I have a mini rice cooker that I adore, and would

love a pressure cooker in that size-just perfect for one or two servings. I

liked the mini rice cooker so well I bought another one for my daughter,

since we were constantly battling over who got to use it-great for a couple

of servings of mac and cheese, pasta, rice, veggies, grains, etc.

Very easy-just place your grains in the cooker, and add enough water (or juice or broth) to cover by about one inch, turn on low and leave overnight. Nice, hot, creamy goodness waiting for you in the morning.
