PUMPKIN ROLL CAKE: 3 eggs 1 cup sugar 2/3 cup pumpkin 1 tsp. baking soda 1/2 tsp. cinnamon 3/4 cup flour 1/2 cup pecans, chopped Powdered sugar Grease a 10x15 inch jelly roll pan or sided cookie sheet. Take was paper and line pan. Set aside. Mix cake ingredients except pecans and powered sugar using mixer. Pour on top of paper in pan and sprinkle with 1/2 cup pecans, chopped. Bake at 375 degrees for 15 minutes. Spread out towel and sprinkle with powered sugar. Immediately take sides of wax paper and flip cake onto towel. Roll up in towel and cool in refrigerator for 1/2 to 1 hour. FILLING: 8OZ. cream cheese 1 cup powered sugar 3/4 tsp. vanilla 2 Tbsp. soft butter Combine all ingredients and beat in a mixer. Unroll cake and spread with filling. Re-roll and wrap in foil and refrigerate at least several hours before serving. Make the night before and it's even better!
