Guest guest Posted May 17, 2010 Report Share Posted May 17, 2010 Hi Lydia, Raw milk is the best choice if you get it from a reliable source, for instance, the farmer I get my raw milk from has his milk tested weekly. Raw milk in itself is a probiotic and has all the enzymes which pasteurization cooks out.. You can still benefit greatly by making kefir from pasteurized/homogenized milk. However I have found that when making kefir with pasturized (I call it dead!) milk results in creamier and smoother kefir. But if you have a choice for nutrition sake, use the raw stuff!
