Fermenting in fridge

Has anyone tried to carry out the fermentation process for milk and

water grains in the fridge?

The reason that I ask is I think that the problem that I have because

the milk is fermenting too quickly due to the heat. I have not tried

water Kefir yet and am looking for grains.

I live in Tel Aviv, Israel where the daytime temperature in the

closet that I keep my fermentation gets to be about 80+F. I'm

suspicious that this is what is causing my milk to ferment the way it

is, too quickly.

Please write me off the list as keeps going down on me.

On another note does anyone do Kefir commercially, and if so could

you please share how you do it, what you use for packaging, and if

possible how you work out your pricing structure, and if and what

problems you have encountered with the powers that be, the government.
