I have about 1 cup of milk grains and I would like to make 1/2 gallon of kefir every other day. My problem seems to be that I over ferment. I have 2 questions; 1) how much grain to milk ratio do I need to make 1/2 gallon at a time and 2) how do I keep from over fermenting? So as I understand what you're saying, milk grains will 'sort-of' make water kefir but it's not the same as what is produced by real water grains. Thanks for the info.
