Ratio Question

Hi All, I am rather new to making kefir. I have about 1 cup of milk

grains and I would like to make 1/2 gallon of kefir every other day.

My problem seems to be that I over ferment. I have 2 questions; 1) how

much grain to milk ratio do I need to make 1/2 gallon at a time and 2)

how do I keep from over fermenting? My weather seems to be all over

the place making it difficult to get this just right.

I am not a Kefir expert, but if she wants to make 1/2 gallon every other

day, could she not cut her grain ratio to half what is required and ferment the

kefir the extra time? Rhonda

Hi ,

Your one cup will make one gallon per day. So you are only giving them half

the amount of food they need. You prevent overfermentation by adjusting the

milk or removing some kefir grains from the jar.

Kefir grains need a fresh change of milk every day so please don't try to do

a 48 fermentation.

To keep the kefir grains happy you only want to give them what they can

handle in a 24 hour period. You don't want to give extra milk and go longer

because of competing bacteria.

My grains are growing like crazy! lol Is there a way to make some of my

extra milk grains into water grains?

Water grains can turn into milk grains but milk grains will never turn into

water grains, however, you can put some of your milk grains in a sugar water

medium and have a water kefir like beverage.

Thanks for the info Marilyn. So as I understand what you're saying, milk

grains will 'sort-of' make water kefir but it's not the same as what is

produced by real water grains.
