WHAT I'M FIXIN'!

Oh, I know. Your inquiring minds want to

know...What will will be eating

for dinner on Christmas Day? Well, first of

all, I want to let you know that I have 1600 calories

a day, everyday.

That's true whether it's a plain-old Thursday, like

today, or a holiday like Thanksgiving or Christmas.

What will

will be eating for dinner on Christmas Day?

Typically, I try to balance my three meals-a-day with

about 500 calories each. That extra 100 calories left

over is for when I may want to splurge a little during

the day or I use them on a snack.

But on holidays, I shift my 1600 calories around. I

save a few hundred calories from breakfast and lunch

to spend on my holiday dinner in the evening. That

way, I'm staying within my daily caloric range while

enjoying a dinner that's a little bit more than what I

might usually eat. All of this should make sense to

you because it's all basic arithmetic. Okay, now that

I've explained all that to you, let me tell you what I'm

fixin' for

Christmas dinner.

I'm having an Italian-themed Christmas dinner. I'm

not preparing any appetizers at

all. Hey, if you're not careful with those

appetizers, you could end up having dinner...before

you have dinner! LOL. I'm making a beautiful

and scrumptious Christmas Wreath salad. I make it

with spinach, tomatoes, and other colorful veggies to

give it a real holiday look. (Hey, that's why I call

it a Christmas

Wreath salad.)

I use a fat-free balsamic vinaigrette dressing on my

salad. We have to be careful. Remember, it doesn't

take long for all of those fat grams to begin adding

up, ya' know!

I'm going to have my famous

turkey meatballs and serve them with marinara sauce.

I'm also going to have my famous turkey meatballs and

serve them with marinara sauce over rigatoni noodles.

Plus, I'm making Brussels sprouts with fresh cut

chives and pears. Mmmm, doesn't that sound good and...it's

so healthy, too!

For dessert and, oh yes, I am having

dessert. I'll have a slice of my favorite, Key Lime

pie. My sweet Hattie will get a little bite of that

pie, too. (She just loves it!)

So my Christmas Day dinner is all set and, I can

guarantee you, after I leave the dinner table,

there'll beno grazing later.

I don't even have to tell you, enough grazing can

quickly turn into another meal, too! After having

such a delicious and healthy meal, I'll be satisfied

and able to go to bed Christmas night not feeling

stuffed...like a turkey.

So, I want you to do like I do. Eat a

lighter breakfast and lunch Christmas Day so you can

eat just a little more at dinner and still come out

feeling...thinner!
