Tortilla Soup

Amount Measure Ingredient -- Preparation Method

8 cups vegetable broth

1 can small white beans -- (15 oz.)

1 cup frozen corn

2 stalks celery

6 baby carrots -- diced (6 to 8)

2 cloves garlic -- minced (2 to 3)

1 T. cumin

1 T. cilantro -- dried, or 3T fresh

3 green onions -- chopped (3 to 4)

corn tortillas -- chips, crushed

soy cheese -- optional

Salt and pepper -- to taste

Add all ingredients except chips, cheese salt and pepper into a large

saucepan and cook until veggies are tender (approximately 45 minutes).

Add salt and pepper to taste.

Serve with crushed chips and grated soy cheese.

I know there has been more than one Tortilla Soup recipe posted.

So which is the one most of you are referring to?

(Sorry I can't view older posts at work since groups is a blocked site)

I think I'm gonna have to make a trip to the store for some tomatoes etc.

The recipe I used is:

Throw the following into the VM:

1 carrot

1 stalk celery

1 large roma tomato

2 cups boiling water

1 chicken boullion cube (Actually I used chicken " base " from Sam's)

1 Tbls " Blend It Up "

Blend the crap out of it at warp speed until it starts to steam or until the VM

achieves orbital velocity.

Slow the starship down to sub-light speed, add the following:

1/2 cup black beans

1/2 cup corn

a handful of tortilla chips

a couple sprigs of cilantro

Bring the speed up to 3ish and let it go for a few seconds...

Feed the starving masses.

This very simple version of the recipe is VERY tasty... I imagine the one on Lea

Ann's site is far more complex in flavor profile.

I forgot to add three ingredients in the basic " throw it in " mix: a decent

slice of red onion, 1/2 a Jalapeno pepper and a chunk of a really nice sharp

cheddar.

If you want to add cooked shredded chicken breasts, I boiled up the breasts with

the soup bouillion first. I kept out one breast, added one cooked breast and

the water that I cooked the chicken in. Just a thught.

I use the one in the 5000 cookbook which is the same as the one in the current cookbook except that the spicing is different. I use 3/4 tsp. adobo and 1/4 tsp. Arizona Dreaming but might go half-and-half next time. I make sure my Roma tomato is REALLY ripe, though, which involves throwing it in a paper bag for a few days; I also use thick slices of everything and make sure my broth has lots of its own flavor. I also pre-roast my veggies because I think the soup tastes better that way.

Oh, the one I use is LOTS busier--it also contains yellow squash, cabbage, mushroom, onion, garlic, and bell pepper with 3 cups water.

I shred my cheese and put it in the soup mug with the chips--much easier to clean the container that way.

Adobo powder is a seasoning: http://en.wikipedia.org/wiki/Adobo . The original Vitamix tortilla soup recipe calls for 1 tbsp. of adobo powder but I think it's a misprint. I've always used a teaspoon and it's perfect.

I don't have a Penzys nearby,  never heard of it.  I live about an hr from Seattle.

Never herd of adobo powder or Arizona Dreaming either.  Lol

Oh well.  It did turn out well.  A bit too thick for me,  but my daughter dipped her tortillas in it. I pretty much followed Lea Anne's recipe except for what I didn't have,  and also added the taco meat and my own seasoning.

At shows you have no choice but to buy a 3-pack for roughly $30 - so they are $10 each, but again, you must buy 3. Looks like $14.96 is the final cost after shipping and discount code applied. For many people this is the only way they can get the Blend It Up Spice because they didn't pick it up at the Road Show. We don't sell the spice at Military Base shows or at Whole Foods shows.
