This is today's dinner. I use salt free veggie broth instead of chicken.

Uncanned Jersey City Tomato Soup

non-stick cooking spray

1/2 cup onions -- diced

14 1/2 ounces chicken broth -- *see note, low sodium

1 teaspoon dried basil

1/2 teaspoon paprika

1/2 cup uncooked basmati rice

1 pound tomatoes -- fresh, peeled, seeded and chopped

OR

16 ounces canned tomatoes -- drained and chopped

1 1/4 cups tomato juice

1/2 teaspoon sugar

salt -- to taste, optional (adjust nutritional info

if used)

4 sprigs fresh basil -- for garnish

Coat large nonstick saucepan with cooking spray. Heat over medium high heat.

Add onion. Cook 1 minute, stirring constantly.

Add chicken broth, dried basil, and paprika. Simmer 2 minutes. Bring to a

boil, add rice. Cover, reduce heat. Simmer 20 minutes.

Add tomatoes, tomato juice, and sugar. Simmer 10 minutes.

Taste and add salt if needed. Ladle soup into serving bowls. Garnish each

with a sprig of basil.
