It seems to me that any grain would work--it's the coarseness of the grind that

is the critical factor.

substitute for corn meal

I am fortunate enough to have a local pizzaria that serves spelt crust pizza

where I live. However, he (and most pizza makers) uses corn meal to lace the

bottom of the crust so it doesn't stick to the floor of the oven. My question

is if anyone knows a good replacement for corn meal that is an acceptable

ingredient and can act as corn meal doe--to provide a rough surface so the

coating of the crust won't be sticky. Thanks for your suggestions.

brown rice flour has the coarsness

millet flour has the flavor

So does pure rice bran and it adds good fiber.

What I use for several " cornflour or flour " needs is a 50/50 mix of dark

rye flour and pure rice bran.
