Gretchen substitute for corn meal I am fortunate enough to have a local pizzaria that serves spelt crust pizza where I live. However, he (and most pizza makers) uses corn meal to lace the bottom of the crust so it doesn't stick to the floor of the oven. My question is if anyone knows a good replacement for corn meal that is an acceptable ingredient and can act as corn meal doe--to provide a rough surface so the coating of the crust won't be sticky.
