how long do fermented drinks last?

I made some lemon punch, and it has been in my fridge since fermenting. Does

it last days, weeks, months, how long? Does it get a bad smell when it

All I have experience with is the ginger drink (water, whey, fresh ginger, lime

juice, honey/sucanant) and this lasts in my fridge for two months (drank it up,

so I don't know how long it would last). I think the drink is bad when it grows

mold or makes you drunk!

hee hee. Suze, I too enjoy a good alcoholic beverage...but only when I'm

expecting them!!! The last time I induced drunkenness by mistake (from beet

kvass IIRC) it was in the morning and I had to go to work!! Not much fun at

all!!!!

IMHO, the ginger drink is sublime mixed half and half with seltzer water. I

forgot to say that I add salt as well--but DON'T add as much as Sally says--I

use more whey and less salt. Also, I just peel and chop the root loosely,

grating ginger is too much of a p.i.t.a.

--->ok, great! thanks for the tips. i'm going to make some this weekend. i'm

really obsessed with ginger and am always interested in new ways to fix it.

I'm actually going to try the raw butter candy recipe posted a while back,

BUT will add mashed fermented ginger. yum...

I made some myself recently, and frankly I think it smells bad (and tastes

bad!) when it's still " good " ! I have yet to succeed with a single

fermented beverage recipe in NT. Everything else in the book I've tried

has been as good as gold, but as far as the beverage chapter goes, I may as

well wrap my lips around a sewer pipe and drink sludge.

My rule of thumb is that if it looks or smells bad, toss it. Otherwise it

is ok. I have had fermented drinks (veggie) in my refrigerator for up to 6

months and it was fine.
