According to my Italian cookbooks (Hazan, etc.) bright green olive oil is a sign

of oil pressed from very fresh olives. Also, cloudy is good, as it means it

hasn't been refined or filtered. I think Sally recommends Bariani Olive Oil

from CA--organic, unrefined, etc. I haven't tried it, though.

You can get Bariani olive oil from Radiant Life. It is expensive,

but it is wonderful!!
