Switchel Recipe… Well, you’ll need 3 to 4 quarts of water, 1⁄2 cup of cider vinegar (preferably one you’ve infused with herb minerals), 3⁄4 cups of honey (or 1 1⁄2 cups sugar if you prefer) 1/3 cup of molasses, and 2 ounces of fresh grated gingerroot. Combine 1 quart of the water with the rest of the ingredients and simmer for about 20 minutes to extract the flavor and goodness (vitamins, minerals, etc.) from the ginger root. Remove from the heat, cover and cool for about 30 minutes before straining out the ginger root. You can choose to store your switchel in the refrigerator this way and add 2 or 3 more parts water to it when you’re ready to drink it, or you can add 2 to 3 quarts more water now and store it in a gallon jar ready to drink. I have been enjoying my switchel warmed, but it can be drunk chilled or at room temperature as well. You may also want to add cinnamon and/or cloves to your blend for extra fall flavor and herbal goodness.
