You can also freeze the crackers BEFORE you dehydrate and they go great straight from the freezer to the dehydrator. I make them daily, and freeze them, so I always have them on hand ready to dehydrate. Being gluten free, I was tired of the nasty (and expensive) cardboard tasting " gluten free crackers " that were available. I like that I can adjust my herbs, seasonings, etc in my own mix.
