Jicama-Pineapple Salsa> Ingredients:> 1 Medium-sized Jicama (about the size of a> soft-ball) peeled and diced> into medium cubes.> 1/2 Pineapple (peeled, cored, and diced into large> cubes)> 1/2 Red Bell Pepper (seeded and diced-small)> 1/2 Green Bell Pepper (seeded and diced small)> 1/2 Red onion (diced)> 2 Tablespoons Minced Garlic> 1 Tablespoon of Paprika> 1 teaspoon red or green Chile (your choice)> minced> 2 teaspoons ground Cumin.> 1 Juice of one Lime> Whole Cilantro leaves for Garnish> > Directions:> In a Large Bowl combine all the ingredients.> Refrigerate.> Will keep for up to a week..(if it lasts)> This will make about six Cups.
