Here's one more of Elaina Love's fabulous recipes from her newsletter, www.purejoylivingfoods.com Sprouted Lentil salad by Elaina Love 1 cup lentils, sprouted (should be about 2 cups after sprouting) 1-2 scallions thinly sliced 2 Tbs. olive, avocado or flax oil 2 Tbs. lemon juice 1 tsp. onion powder 1/2 tsp. cumin powder 1 tsp. Himalayan salt 1 cup diced tomatoes and 1 cup diced avocado 1/8-1/4 cup minced parsley, basil, dill or cilantro 1/2 carrot, thinly sliced and 1 stalk celery, thinly sliced Sprout the lentils. Mix all the ingredients together and adjust flavors to taste. Fun additions: Dulse flakes, Peas, Corn, Red bell peppers, minced == Enjoy. Doesn't this sound super simple??????????
